Do you want a stricly xc bike? If so, do you want it geared more towards racing or all around riding?
My choice would be the Kikapu. It has a nice feel and a well built frame. Also, it is not to heavy. You can upgrade all the bikes you mentioned but the Kikapu is based on a race geometry (same frame the Kona team rides), the Jamis will be a bit more relaxed and the NRS is somewhere inbetween.
I have ridden all three and the Kona is my choice as the best of both worlds. With the right shock on it there will be less bob, is lighter and handles the harsher terrain better and is comfortable on long rides ( I prefer the geometry better). It does however have more of a race geometry so it will not be quite as stable on the high speed descents as the Jamis or Giant will.
If you go with either of the other two I would pick the Jamis. Just personal preferance. But being that you are a beginner they will all work well. Try and ride all three, in the correct size for you, then decide. How the bike feels to you will be the deciding factor. Check with the shops and ask if they have any demo versions of the bikes, that way you can take 'em out on trail and realy get a feel for them.
