600EX - Dates from the mid-80s. This was 600 with indexed shifting, and a step down from Dura Ace AX and 600AX. [If I remember correctly] In the early-90s, "EX" was Shimano's code for good, but not as good as the really high-end stuff.
600 - By 1988 [or a little earlier], the group name had been simplified to just 600 and became 7-speed.
600 Ultegra - Introduced in or around 1990, this was 600 with 8-speed [though I seem to remember that it was also available as 7-speed]. 600 Ultegra got STI levers around 1993-1994.
Ultegra - Introduced in 1998. 9-speed STI.
