Bicycle Mechanics - Little plastic thingy?

I just got done replacing a spoke, and in order to do that I had to remove the cassette. Between the cassette and wheel was this circular plastic piece. Does this serve some vital function, or can I just leave it off?
it keeps you from shifting into your spokes, only useful if you rear derrailler isnt set up right, and you can shift past the biggest ring

That is a spoke protector, otherwise known as a dork disk. As long as you keep your derailleur limit screws properly adjusted, you can throw it away.

speaking of which, you wouldn't happen to know of any detailed multi-angle drawings/pictures of a bike labeling every part?

For the record I don't have spoke protectors on any of my personal bikes but let me give you the opposing view.
If you ever overshift into your spokes, even for a second, you will bugger up the 8 outside spokes. When that happens, unless you replace all 8 of them, they will sit around and eventually break one at a time. It's a common problem. Proper derailleur adjustment isn't always enough to protect you. If you ever bump your bike on the right side, you can bend the derailleur hanger inward enough to cause the problem.
If you understand how your bike works and you are careful enough with it, you don't need a spoke protector. If you're not sure, I'd leave it on.

Or you can just adjust the limit screws so it never travels to the biggest cog in the rear. But event hat's not fail safe.
