You might try ...

-- bananas
-- fig newtons (or other kinds of newtons)
-- cereal bars
-- granola bars
-- Sunripe fruit bars
-- dried fruit
-- various packaged pastries
-- small bag of potato chips or pretzels
-- small bag of other nuts (almonds, cashews)
-- bagal cut up into bite-sized pieces and placed in a baggie
-- gels
-- canned or powdered Ensure

And if you still want to use energy bars, you might take a look at Peak products: http://www.peakbar.com/

For a long ride, don't think so much about what you can carry, think instead of where you might be able to get food along the way ... restaurants, convenience stores, etc.
