Confession: I was over 30 before I found out that one can buy spinach that's not canned. What surprised me is that fresh leaf spinach doesn't seem to taste anything like that limp, sodden canned stuff... it's more like lettuce. Since then, I've been adding it to sandwiches. Great way to add some veggies. :)
If I'm the last one here to learn this, sorry to state the obvious! ;)

The only time I've ever seen the canned stuff is on Popeye cartoons.
My better half and I hardly eat lettuce anymore. We use fresh spinich in place of lettuce in most instances including salads, tacos, etc. We even like the frozens stuff. Heck I've even converted my parents who haven't looked sideways at spinich in forty years.
I too love fresh spinach as a base for salads. In fact I prefer all vegies raw either in a salad or juiced(technically blended with water and strained).Cilantro plus a touch of lemon is my favorite to juice.

Chopped spinach, pine-nuts, garlic, olive oil, black pepper and pasta.
I'm hungry!
:D
Seems like no matter what or whose diet you try to follow the terms "green leafy vegatable" is a good thing. Spinach clearly qualifies as a green leafy vegatable. Lucky for me I love the stuff.

I'm with you on the canned spinach. Unfortunately the wife really can't stand it. It is easier to just let it go than to try to make completly different meals when there are only 2 of us.

you'd be surprised at what you can put fresh spinach in. I like it in Pasta and Fried Rice.
