Bicycle Mechanics - fork steerer - max amount of headset spacers?

i'm setting up gf's bike - it's a 48cm road bike with an easton EC30 cf fork with steel steerer. easton says 50cm max height of spacers for this fork. the mechanic i had press the headset and install star nut says he's not aware of reasons to not go even higher with spacers.

I'm trying to get her bars as high as is safe. She's short and light, and is not doing 50mph descents. So I can't see her putting much force on the fork steerer. Can anyone offer thoughts on why one would want to limit headset spacers in such a situation with a steel steerer? What is the reason for limiting the spacer max height on steel? (I get why on CF). Also, Sheldon Brown seems to get away with a wild way of rasing the bars without spacers that would seem to me to be even worse than using more than the max amount of spacers for a given fork. http://sheldonbrown.com/handsup.html#threadless

My wife use to ride a bike with a 1" CF fork with 50mm of spacers ('course it was the wife). YMMV

I hope that's 50 mm, not cm...
