Is it possible to an 8 spd bar end shifter with a 7 speed cassette in friction mode? Would the chain pop off if I move the shifter too far or something?

You should be able to use it in index mode. I did. You just have an extra click after you're in the lowest gear.

the c-t-c spacing for 7 speed is 5.0mm while it's 4.8mm for 8 speed. it might sort of work indexed, if you're really lucky. friction, as already mentioned, will work just fine provided your limit screws on your derailleur are set properly.
