I see new Ultegra parts listed as "10-speed". They use the term to refer to the freewheel and shifters, of course, but I've also seen it applied to the *brakes*. Is that just because "Ultegra 6600 10-speed" is the brand name, or is there something about the brakes that makes them part of a 10-speed gruppo?

Ultegra 6600 is a full group, including the brakes. The BR-6600 brakes are different from last years model that shipped with the 9s Ultegra group (the new ones are a big improvement, from what I've read) but brakes are in no way related to the drivetrain of the bike. Basically, use any brakes you like!
