I have a shimano mountain pedal that squeeks when i push down hard on it. Is it a relatively simple matter to take it apart and relube/regrease the bearings or should i be careful? Any suggestions?

Doesn't seem too complicated, but it looks like you may need a special tool if you want to pull the whole thing apart.

Yes, what jalexei said. Plus, if your pedal is a M636 (and some others), you are going to need one of these:

and, for a lot of Shimano pedals, you are going to need one of these (it's too bad, you used to get one of these with the pedals):

It would help a lot if you would post the model number of your pedal.

Hey, if it's an SPD pedal, isnt't the cleat mechanism squeaking instead of the bearings? Clean, check for rust, grease...

i dont know the model number. I bought these a couple of years back, then switched bikes but kept the pedals. Maybe i should just take it in to the shop. I feel bad though, as when i was a kid i used to fix stuff like that all the time.
