Ok, I'm doing some upgrading. I've got new Ultegra 9 speed STI brifters coming, a new 9 speed front derailer but a new 10 speed rear derailer. The Shimano tech paper said it will work. But will I have to use a 10 speed chain? No mention of that on their site.

I'd use a 9s chain.

9 speed chain is what all the bikes that come stock with this setup use (9s gruppo with 10s rear derailleur), and it works beautifully. If you were to put a 10s chain on a 9s cassette it may or may not work as cleanly since 10s chains are a little narrower.
