I often wondered the same, all I can see is that you can fold up a kevlar and carry it as a spare. Maybe save a few grams if that's your thing.
Any other differences?
As I read on the forums from a large thread, the difference is weight and that you can fold the kevlar. The weight is minimal too btw.

It's funny you mention that. I dislike installing kevlar MTB tires, however my girlfriend finds them so much easier. It's not a huge deal, but to me the wire beads have always been easier to manage

Wire-bead tyres tend to weigh about 50-100gms more than kevlar-bead tyres... Find some tyre models that come in both and compare the specs.

Yes, installing wire beads on some slightly oversized rims can be next to impossible. Or the wire bead you get may be a tad too small for your rim. So i get the kevlar beads & avoid the problems. They normally cost more, but you can get them discounted from the catalogs or sometimes on sale at your LBS.

I've also heard that wire beads stay on the rims better in super extreme conditions...hence their use on downhill bikes.

we are talking about kevlar bead here.
I like kevlar, the main reason is the fold-ability but it doesn't hurt that they are lighter
