Over the weekend, i looked down at my bolt-through front wheel and it occured to me: if i got a flat on the trail, how hard would it be to replace the tube? I'm guessing it'll be easier to patch the tube rather than fiddle with the bolt. Any suggestions?

Carry a Surly Jethro Tool with you. Its a compact 15mm box wrench. With a wrench, replacing a tube in a bolt on is just as easy as a quick release.
