Are Direct-Pull brakes not compatible with Aero style shift/brake levers like 105, Ultegra...? It seems like all cross bikes have cantilevers. I assume this has something to do with effort involved...

not enough pull on road levers for V-brakes to work. Usually your levers will hit the bar before the pads hit the rim. It can be done, but canti's just work better with road levers.
Besides, canti's work great and are lighter.
you can get mini-v's (bmx) or a little rollercam attachment to V-brakes to take up the additional cable pull.

You can get V-brake boosters, $18 each from Nashbar, which allow you to use road levers with v-brakes.

Ok, I just realized we are talking about different things. I don't know if the boosters work with cantis, but that doesn't seem to be the issue anyway.
Are you wanting to switch to caliper brakes. Some frames and forks designed for canti/center pull brakes also have mounting holes for caliper brakes. Just measure carefully to make sure that 1) you get calipers with enough reach to engage the rims and 2) the mounting bolts are long enough. I replaced the cheap brakes on a cheap Sears mtb with some old cannibalized Weinman calipers, allowing me to use some spare good quality 700 wheels in place of the crappy 26" wheels. I did have to swap the mounting bolts to get the right length. My wife wouldn't let me buy her a decent bike, but with a little creativity and using some parts on hand I cobbled together a pretty ridable, easy-rolling bike out of my daughters old Sears mtb. Shifting isn't super, but she doesn't shift anyway. I'm hoping to get a decent used bike before that becomes an issue.
