Has anyone ever seen white rims and spokes? Also does anyone know if you can custom color spokes / rims?

Velocity has their rims in a TON of colors (they add new ones each week just about) and I guarantee you its a better rim than a comparable Alex. Just be forewarned, even on a road bike white rims look like crap pretty fast.

Halo makes white rims. I think Spinergy has white composite spokes.

I recall seeing white plastic rims on a kids' BMX. They looked bad in the 80's too...
