i plan on switching the side my brake levers run on, simply because my right hand is dominant and i run my fromt brakes more than my rears. before i take apart my setup, is there anything i need ot worry about? or is it strictly a plug-and play job?

You might have some cable line issues with the front V brake.
I like to run bikes like this also for similar reasons. I think due to the fact that when I first rode bikes as a kid with bmx, I probably only had a rear brake and tend to squeeze my right hand automatically where as it takes some mental effort to pull the left hand.
I think it is called 'moto' style or something. It is easier to run with discs because of cable issues.
Note: some v brakes have a reversible noodle to facilitate this.

i have discs so its all goold.
To keep things smooth you'll want to switch noodles to something like this 110 degree jagwire model: http://www.utahmountainbiking.com/shopmiva/images/Jagwire/noodle110_sm.jpg
The setup will look like this

Well hell. That's easy as pie. So long as you cut your hose / housing to where it doesn't have any sharp bends you're golden. Remember gentle curves.
