My 2003 Specialized Epic Pro has full XTR with XTR V brakes and integrated brake levers/shifters. I believe the frame is disc compatable. If I want to replace the V brakes with hydraulic discs, do I only have to replace the wheels and the brakes or would I also have to replace the XTR integrated levers/shifters also? Thanks in advance for your help.

You'd have to change the shifters/levers also. Or you could go with some nice mechanical discs, and keep your present XTR set-up. How about some Avid BB7's?
