from what i've always sort of made up to satisfy this question is that campy never made stems.. so far as i know, neither did gipiemme. for the most part, if you think about it, a gruppo is a set of parts that all have some mechanical movement or another, cranks move, hubs move, headsets move, etc... (but then again, a seatpost doesnt move... unless it's got that neat adjustment screw thing.) monopoly type stuff might play a part in it too. cinelli ran (runs) the stem/bars game.

Perhaps because stems and stem length are particular to the person who is buying it, moreso than crank length or cog size.

true, but then again they make seatposts in two or three different diameters (26.8, 27.0, 27.2) , and crank length can also vary within the gruppo. 165, 167.5, 170, etc

back in the day maybe, not in the threadless world by any means; it's a free-for-all out there. and chris king owns the headset space these days. sram are making derailleurs/shifters a three-party system.

I figured it was because there are so many different variations/configurations of stems.

I can tell you why seatpost are no longer part of the group is that more companies start making them and giving people more choice. Just like the stock pedals that came with the groups they were taken out due to the clipless phase.
stems now with groups maybe the threadless types. I haven't bought a whole group in years due to the fact I still have alot of old groups in my storage. Just bits of groups I have bought though recently.

Because the gruppos are against Stem Cnell research.
