Road Cycling - Carbon Fork

Hi - great site. I am in the market for a new road bike, and will buy a steel frame. I am considering a Lemond Zurich with a carbon fork, as well as an Italian frame with a steel fork. I seem to get varying viewpoints depending on which salesman I talk to. Can anyone offer an opinion on carbon vs steel forks with respect to handling and ride? I am unable to ride the Italian frame in my size (around 61), and I'm not sure I appreciate the differences between the two when riding a frame that doesn't fit me.
Thanks.
I like the combination of carbon blades with steel steerer. You get the vertical compliance comfort of carbon with a little extra strength. The extra weight dosn't bother me.
