I've been riding since I was a kid and I can definitely say that I am a very experienced faller :-).
I also used to mountain bike and I now road bike and I can tell you that in road biking the few times I have fallen (once relatively seriously that sent me to an ER with road rash and a cracked wrist) it happened too fast to even react. I once had someone on my left decide to go right and took out my front wheel (low speed, no damage done) and in that case I did get a second of 'oh crap' before going down.
