I am wondering what you guys think it would cost, not including equip., for a tour like this. Also one quantifier, I am vegan, so figure food being a little more expensive. I do ride pretty fast though and for some reason *knocks on desk* don't break too many bike parts. Maybe because I only weigh 130 :p

You would have to buy food even if you wern't riding, though you may be eating more. I've found that vegan is usually cheaper. From what I've read, the big expense will be hotels and camping if you plan to stay in hotels at all.
This link: http://www.mikebentley.com/bike/harry/57.htm is the last page of one man's tour accross the us, and it includes a pretty good accounting of costs. He spent $43/day, but that figure included a lot of dough for airfare and hotels.

Guess I should have also pointed out, I will be stealth camping most likely every night that I am not staying with friends because motels are a ripoff and I like sleeping outside. oh yea, and airfare to sanfran is nil.

I don't play a vegan in real life only when I tour..
Kind of hard to answer your question without knowing more about you. What type of Vegan are you? some Vegans I know only eat raw fresh produce and unleavened bread.Do you eat dried foods? Do you cook? do you have a small backpacking stove? How large are your panniers and how much food can you carry? All of these things figure into the cost of food.
example: my 12 day tour earlier this year . before the tour I bought
1 lb of freeze dried organic Vegetable mix $20
1.5 lb of organic brown rice $3.75
1 lb dried potates flakes $3.00
1 lb oatmeal $2.00
1 lb dried pinto beans $1.00
1/4 lb of dried onions $1.50
1 lbs trail mix $6.00
.5 lb dried fruit. $3.50
misc spices ~$5.00
alcohol fuel 2 quarts $4.50
That was enough food for 12 days plus I spent an average of $5.00 per day buying fresh produce,water,postcards and personal items. That was $10 per day.
I did pay for camping 7 of those days and ate in a resturant a couple of times. which added another $100 to the cost of the tour
I am guessing about 3000 miles if you ride a more or less direct route. at 75 miles a day that is 40 straight days of riding add a day of rest for every 6 days ridden and you have nearly 50 days on the road at $10 per day. there is $500. Plus you need some contingency money set aside in case of unforeseen bike repairs, illness, Camping you may be forced to pay for etc. Bail if you get busted for trespassing etc, $250 in contingency money would probaly cover you , Now you are up to $750.

Did a month long tour of stealth camping everynight but one night where I paid for a site. The tour cost me about 12 bucks per day and I could have made that cheaper by not eating fast food and drinking sodas as much at conv. stores. I'm not a vegan though. Probably would be cheaper if I were so I wouldn't eat at McDonald's and Hardee's as much. My biggest mechanical expense was buying tubes for the flats. 3 bucks a tube.
I figure to be safe, cost of food per day plus 5 bucks a day goofing around money times the number days you will be riding plus emergency cash will be what you will need.
Basic bicycle repair is a must to know like replacing a pedal, chain, spokes, tires, tubes, lube, etc in order to keep expenses under control from having someone else do it for you.
The odds you are going to get caught stealth camping is minimal and the worse thing that usually happens is you are asked to leave. Just don't stealth were it clearly states NO TRESPASSING or you have to cross over a fence (implied trespassing) or at a public school or near a playground. I've never been caught.
