My commuters are mostly older bikes - especially older 10 speeds with 27"X1.25" tires.
Does anybody know where I can get studded tires for this size? I have seen 700 mm tires, but not 27".

I haven't been able to find any either. I asked about 27" winter tires at my LBS earlier this afternoon, and the best they had to offer were Kenda K161's -- 27" x 1 3/8" knobbies. So far, I've only been on one test ride with them. They're okay on fresh snow, but I wouldn't expect much traction on ice.
I've heard of people making DIY studded tires by sticking machine screws into knobby tires, but the knobs on the Kendas are pretty thin, so I don't think I'd want to try it with them. Harris Cyclery (http://sheldonbrown.com/harris/tires/630.html) has some similar tires with a more aggressive tread (at about twice the price I paid for the K161's); those might be better candidates for conversion.
It may be easier to select the tires you want, and then buy a set of rims that fit them. Nashbar has road wheelsets that cost less than a pair of studded tires.
I'm looking for 27" studded tires too, and converting the wheels to 700c is not an option for this bike. There was this thread from last year about 27" studded tires.

There are NO 27" studded tires. However, if you can lower your brake pads by 4 mm, you could install 700c wheels. The most important wheel is the front one and a second-hand 700c front wheel would not cost you a bundle (I got one for $20 Canadian).
Added benefit: you get more clearance under your fenders.
