So I went and cut off the sides of the saddle (Soft Nylon). What type of cushion should I use to pad it and what type of fabric should I cover it with?

try riding it without any padding, you may find you don't need it.

I recently covered an older immitation leather saddle I found with some wool- houndstooth- worked out pretty well- just staple the loose ends underneath with a staple gun.-*** you can do it with any fabric**
