I used to always tighten bearings (i.e. wheel, headset or bottom bracket) to where I just could not feel any static play in the element in question.

Nowadays I seem to want them a bit tighter, (to make the bike tighter), but I'm worried about long term damage.

Are there any online tutorials, or what are your thoughts?

It should go without saying... check www.sheldonbrown.com (http://www.sheldonbrown.com/). Different bearings are adjusted differently, but to give you some feel for it, I'd recommend starting with the cone adjustment (http://www.sheldonbrown.com/cone-adjustment.html) article, in particular the advice on quick release adjustment.
