Can I still use my Ultegra stock short cage rear d. if I go to a climbing cassette 12-27 from 12-25? Thanks. :)

Your derailleur will be fine. It may or may not be necessary to lengthen your chain by a couple of links.

Any tell-tale signs that your chain length is messed up? :( :)

Wrap your chain around the two biggest sprockets bypassing the rear derailleur. Add one inch (two links) of chain. That's the shortest chain that you can safely use with that gear combination.

RG's technique is the best one if you are installing a new chain. If you are going to use the existing chain (probably not a good idea with a new cassette) try VERY CAREFULLY to shift into the big chainring/big cog combination. If it goes in easily, no problem. If there are any signs of distress, STOP right there and plan on lengthening the chain or, beter yet, replacing it.
