Classic & Vintage - Restoring a stingray, what do I keep, what can I replace?

I have a 1968 schwinn stingray stik shift, blue with a red saddle and grips. It might even have original tires on it, but I really don't know. I've been told to keep any and all parts that come off this bike. I'd like to restore it making as few changes as possible, but I need to know what is "ok" to replace.

I'm assuming cables are OK,
chain I'm not sure about,
innertubes are obviously not a concern,
replacing old rusted bolts with new shiny ones?
should I try and repack the hubs and BB or not bother.
keep the old tires, or put on some pyramid whitewalls?

Keep the handlebar grips and toss the rest of it. :p

well obviously "consumable" parts should be changed probably (chain,gears,grease,bearings,cones,tires,etc..) just try to clean up what you can on it with some polish, wax & some elbow grease ( which makes all the fun in the project...eh?)& enjoy it :)
