I have Shimano 105's. How do I tightend my brakes when the pads start to wear down and the cables start to stretch so my bike still stops well?

You should have a barrel adjuster on the top brake arm. Turn that counterclockwise about 1/2 turn.

The barrel adjuster on the brake arm where the cable housing enters will reduce the clearance between the pads and the rim. Eventually it will run out of travel and you have to do one (or both) of two things.
1. Replace the pads with new ones.
2. Screw the adjuster back in all the way, loosen the cable clamp bolt and take some slack out of the cable.
