Looking to buy a new recumbent and I've narrowed my choices to one of the following which I have arranged to test ride in the near future. They are: Bachetta Giro, Rans V-Rex, Rans Rocket, M5 26/20 and the Burley Hepcat. Would appreciate any input on these models. I currently ride a Rans Screamer with my wife, but would like to add my own single to the stable. Recreational/touring

I've never ridden any of these models but some of them are quite popular. I've two 20/26 SWB models though, one a Baron lowracer in the same class as the M5 you mention. If you like speed, you won't be disappointed. I have to say I don't know about "recreational/touring" rides in depth. I just like to sprint.
