I have a question i saw a trek 720 frame with triple crank on ebay that looked nice and i would like to have another bike. But this bike was orginally set up for 27 inch wheels do you think i could ride it with 700c despite the Cantilever brakes? what do you guys think? because i have an extra set of nice wheels laying around that i'd like to put on a bike and i'm also playing on a chicago to detriot trip this summer and a trek 720 touring bike is probably better then a trek 400 sport touring to ride 600 miles on.

You generally can...the cantilevers have a lot of adjustment because they are made to compensate for misaligned brazing jigs. I dunno if you plan to run v-brakes or something. Never tried that switch.

Cantilever brakes definitely have more adjustment possibilities than v-brakes, especially if you have them with a U-shaped cable rather than a fixed link, because you may adjust the mechanical advantage by changing the length of that U-shaped cable. I never know which way to go except by trial and error, but Sheldon has a couple of articles on the subject.

If things don't work out the way you want – and assuming it's not STI – you may replace the regular brake levers with Dia Compe 287-V levers which are made for v-brakes and therefore pull a bit more cable than standard levers. They are pricy though.

Finally, unless you need the added clearance, have extra wheels at home or need some tires that are available only in 700c, there is no need to change the wheels ASAP.
