One reason is electrolyte loss from sweating. There are products with a broader range of electrolytes than what you find in salt that may work better. How much and how often you take them usually varies with temperature, exertion level, sweat rate, etc.
I've learned the hard way that if I don't get 4 Endurolytes (the Hammer Nutrition electrolyte product) per hour on rides over 50 miles in warmer weather then cramps pretty much bring me to a halt.
