Check the sidewall of your tire and the website of your shock manufacturer.
All shocks require different pressures. It depends on the shock, the terrain, and the rider. Pretty much same goes for the tire.

Yep. Personally I usually won't run tube tires below 55 pounds, and I weigh about 175 - have gotten pinch flats and fast runs below that. Tubeless can run lower.
Shock manuacturers give you guidelines, then it becomes personal preference. My shock recommendation from Fox is 140 - 150 pounds, and I run right about 155 to stiffen the rear end for acceleration (of course, I'm coming off a hardtail so am used to it :D )
