Cat5's go 20-60 miles depending on the race.

I don't think there is one.
Crits are usually by time (50 min, 60 min, etc).
I've done 10 races and they have all been different distances from a 3.5 mile hill climb to a 45 mile road race. As the season goes on, and as you move up in catagory the crits are longer (like 90 minutes) and the road races get up to 80-100 miles or more.
I'd say though that for Cat 5 most road races are in the 30-50 mile range and crits are usually 35-50 minutes.

Hmmm, my 1st year of racing, I did races from 8-miles all the way to 160-miles. Distance really isn't much of a limitation compared to speed & power.

usually in shorter races, the pace will be higher and vice versa.

No such thing. That's the beauty of our sport.
You can see pros race an 1km prologue like last year's Giro, or 300km from Milan-San Remo a week ago.
