I had a Trek 1000 for a couple of weeks, to test ride before I bought my 2200. The bike itself was good, but I could not stand the Sora shifting. If you can get a bike with 105, or a Campy equivalent, you would be much better off. I like Trek bikes, I have three, so I guess my opinion could be biased.

I just bought a Trek 2000 in the late fall and I love it. It is a great bike and so far I have nothing bad to say about the 105 shifting. Matter of fact it shifts so much smoother than the stuff on the 7500fx hybred it's unreal. Same frame as the 2200 but a little less components.
I always wondered why pay lots for high priced stems and bars on a stock bike if you are going to have to replace them anyway. I needed longer reach and wider bars from the start.

A GOOD LBS will swap out those pieces for free when they fit you, don't they??

I was told I get what the bike comes with. In fairness to the bike shop I fit the bike my self because of time restraints when I picked it up. Maby I have a lot to learn yet?
I know I bought it from them because they took time to talk to me and measure and fit me and get the closest fit. BTW the measurements pointed to a 54cm frame but the LBS suggested a 56 for other reasons, like reach. I'm happy!:D
