CAn I use 9 speed Shimano 105 Flight deck shift/brake levers with 8 speed bike?

Nope. Indexing will be wrong. You need a 9 speed cassette. Fortunately they're really cheap, $30 or so right now.

You'll also need a 9-speed chain but they're fairly cheap too.

Damn...that stinks...this bike has a new chain & cassette that previous owner just put on...

I would just ebay or craigslist them, you'll probably get $20 out of them and the whole thing will cost you like $30 net.
