Set up objects to try and hop them. It's better if the object is not very sturdy so that if you don't make it, it will fall over, instead of yourself falling over. Try using 2X4s stactked on top of eachother, that works well.
Practice.

Quoted for truth. Setting up boxes or whatever in the road and just getting used to hopping over at various speeds is good because it makes you work on your timing, which is really important. After you can hop over little stuff and hop decently high, then you can work your way up to bigger objects.
Also, just try hopping at slow speeds to work on your technique. Here's a page with a detailed explanation of the steps: http://www.bmxbasics.org/new/bmx0703.html

I've found that you hop higher when you're trying to clear something. For example, I can't hop high up a curb or on flat, but if I'm hopping from flat onto a ledge/bench/whatever, I can do it without issue.

I've noticed the same thing.
My firends ask me how high I can bunny hop, and it's just over a curb. But I have no problem getting onto benches, ledges and over medians.

I'm the other way 'cause my timing sucks. Can hop like 2 feet if there's nothing around, but if I try and hop a 10" thing I'll hit it with my back wheel half the time because I hopped too late..

No, that would be a normal bunnyhop. There's bunnyhops, and nollies. That's it.

Not true there spanky, I'm gonna get all oldskool on ya :D say that I raced back in the early 80's into the late 80's and we (neighborhood racers) always called it a "j-hop". A bunny hop was when both wheels were lifted at the same time. I've been calling it j-hop before you were born I would imagine.
BTW My highest "j-hop" was a full size trash can standing upright.
FuzzyRyder

Maybe so, but the proper term now is "bunny hop".

Well, I clipped the back edge with my back wheel, but I landed rubber down. I j-hopped  it on my Brother's Hutch, a lot this one.
