Bicycle Mechanics - What do those springs on the spindle do?

Do I need those two springs on either side of the spindle? I seem to have lost them.
Do you mean your quick-release skewer? If so, those little springs just hold the quick-release open when the lever is released. They are completely unnecessary for safe QR function, I wouldn't worry about it.

If you're talking about the springs on the wheel's quick release skewer, no, they are not absolutely necessary. But they DO make mounting/removing the wheel on the bike easier. Also makes it easier to adjust the tension of the quick release. Your Local Bike Shop should have the springs for very little money.
