I'm looking at a pair of Mavic Cosmos wheels ($300.00pr.) and a pair of Shimano Ultegra w/Mavic Open Pro silver rims ($200.00pr.) and wondering if anyone can shed some light on the differences. I weigh about 175 lbs. and ride mostly smooth back roads at 20-40 miles at a time.

About $100 USD.
Unless your planning on racing Lance, or me, that is about the only difference.

Whith that said I answer your question.
The Cosmos will be heavier and much stiffer.
The 'normal' Ultegra hubbed wheels you mentioned will be cheaper on the long run and easier to work with.
Cosmos use special rims that if need be repalced you will need to buy these special. Spokes too tend to be a little harder to find.
