Peanut oil is a decent oil to use if you are going to cook with oil because it contains a decent amount of monounsaturated fat which tends to be more stable when heated than polyunsaturated fats( found in high levels in vegetable oils )which tend to break down at high heat creating free radicals. The added salt can be a problem as most diets contain to much added salt .Also be adviced recent research has shown heating starchy carbs at high heat (in particular deep frying potato chips and french fries )creates high levels of acrylamide a substance shown to cause cancer in animal studies. Please note I am not trying to bash carbs I am just informing you of recent research on the subject you inquired about.

Thanks for the reply, I was hoping some expert would say (yea eat all the potato chips you want they are good for you) but alas I should eat less especially in winter.

On my longer Randonneuring brevets, I actually make a point of eating a small bag of potato chips.

They seem to sit well with me while other foods don't . . . they provide me with salt which I usually need as the ride gets longer . . . they provide me with potassium which I also need (one of those key electrolytes) . . . and they provide me with calories which I desperately need.

When I ride 24+ hours at a time, I burn an incredible number of calories, and at that point it really doesn't matter what I eat, as long as it will stay down.

So if you want to eat potato chips without any guilt at all - ride brevets! :)

I agree with you on my longer rides my dietary guidelines go out the window and I eat anything and everything I can with little guilt because it will be burned off so quickly. I also find I start with more nutrient and calorie dense foods but then find myself going to more highly refined easily digestible foods as fatigue and loss of appetite start setting in.My distances last year got up to 140 miles daily but this was touring type milages taking all day with plenty of stops and by the end I was usually dragging badly with little or no appetite(except for maybe some water and possibly gatoraid )and feeling very overtrained.Maybe I will have to give chips a try lol .

don't they make you thirsty?
i snack on cherry flavoured nibs(little licorice bits) they are low in fat..with enough sugar to keep my interest and instead of singing and killing all the local birds.. i chew and hammer down.

Yes, they do make me thirsty -- which is probably good because while I'm eating them, I also put away a large quantity of water, sports drink, coke, and/or iced tea. I sort of forget about drinking sometimes when I'm out there (although I'm getting better at that) and have become very dehydrated on rides. Making myself thirsty helps remind me to drink.
