That I had bought a new bike back when I had a 1000 and didn't waste it on other crap.
Specifically the color of my rims. They're Rolf Vector Comps. Great, great wheels. Light, strong, true as the day they rolled off the LBS floor. But... I hate the cheesy red anodized color. Why not just simple black or silver?
My only real regret is that I didn't start this hobby sooner. Yeah, there's details I might do differently if I were shopping again, but the difference in the details is far smaller than the difference between being a cyclist and being a couch potato.

The commuter-mountain bike (rigid GT with XT): it doesn't have enough blinkie.
The full-touring bike (~'95 Cannondale touring): it doesn't have enough blinkie, and it's stuck in 7sp land, I'd like 9sp MegaRange + STI.
The road-racing bike ('00 Paramount, Reynolds 753 lugged steel): it's still just a frameset, so naturally it doesn't have enough blinkie, or enough of anything else either! :(
i wish i got a ht instead of a full squish :(

You'll never be satisfied until the frame, rims and seat are made of HID lights and can blind low flying airplanes. :D

I regret ditching the rear disc brake on my Talus...I should have gotten an old man mountain rack, which was disc brake compatible.

That I didn't make the conversion from full time MT Biker to full time ROADIE sooner. Road biking has been a major source of enjoyment in my life. My bikes...I've made good choices with purchases and upgrades. I do wish that I had kept my Trek 1000. But I couldn't justify having three road bikes at the time. What was i thinking!? ha ha
I regret buying cheaper components and then not being happy with them resulting in me buying the nicer components I wanted originally. In the end it cost me a lot more money than if I had just done it right the first time.
No regrets either. My only regret is that I gave up mountain biking 10 years ago and now just started up again. Wow, things would be much different if I would have stayed with it. NEVER AGAIN will I do that.

My Giant ATX 1200's fork. The very worn out elastomers are non replaceable, and it will cost more than twice the cost of putting new shocks on my car to replace the fork. The Coupe Delux rear may be repairable, but as of yet I haven't found any website selling rebuild kits for the 4" model. Last problem is the non replaceable bushings. I hope that one day us bike riders will as a whole stop putting up with this **** and demand that bike manufacturers stand behind their products.

I regret that I didn't find a better painter when I had it repainted. It has flaws that I see every time I look at it (but that most people miss). I regret not picking up that pair of Rock Shox Roubaix forks that Bike Mart had on closeout for $100 back in 2001. I regret giving away the aluminum road fork I had lying around.
That's about it.
monogod get ahold of 55rad. I think he can put you in contact with a great painter and it should only take a day or two (or is that a year or two?). :D

I could probably have it back together in about 15 minutes. The only thing that is keeping me from doing it is the fact that I really enjoy invisioning you squirming around thinking about it. :p
saddles... i just bought a $75 specialized avatar saddle and it doesn't work well... the only other option is to buy their $150 hard as a rock saddle or try a brooks.... i'm gonna try a brooks from wallbike....
trusting bike shops and not just buying all the tools and doing all my own work in the first place
buying an abus granit instead of a multilock e series... i could have had a pin and a disk cylinder lock
spending all that money on that damn thing instead of buying a cross check complete and having some parts upgraded.... i would like drops...
that's all i can think of...
maybe i shoulda just bought a kona smoke... i wouldn't be so broke now and i wouldn't be so pissed if it got vandalized or stolen.

Dude, return the Specialized saddle and get a Brooks B17 from IRO for like $54. Get some Proofide or other saddle type softener protection stuff and you'll be set for life or until you drive it into a low hanging garage.

The thing that sucks the most is that the guy I used to piant the Eddy Merckx was recommended to me by the guy who did a flawless job of painting my Colnago.
