In peanut butter, there is 16g (25% DV) of Total Fat and 3g (16%) of Sat. Fat. I know that there is good fat in nuts (the jar doesn't list the unsaturated fats), but what about the 3g Sat. Fat? That fat is still bad for you right? I guess you have to weigh the 13g (I assume) or so of good fat over the 3g of Sat. Fat? But the Sat. Fat is still bad for you, right?

Well I'm from the side of the argument that say's that SATURATED fats are the healthy fats and that your consumption of polyunsaturated fats should only be in moderation. See http://www.westonaprice.org
Now having said that the BIGGEST issue is the QUALITY of the fats, not nessecarily what their classified as. All fats have a combination of saturated, monounsaturated and polyunsaturated lipids/fatty acids but whichever type is dominant is what the fat is classified as.
So natural food is the go. As to your peanut butter while it can be a natural food I don't know how your paticular brand was proccessed and since its rich in polyunsaturated fat I would class it as something to enjoy in moderation. One of the problems is that fragile polyunsaturated fatty acids don't proccess well and can become easily rancid and if there's a type of fat you realy wan't to avoid its rancid/trans/hydrogenated fats.
