I would like to make a flat bar bike out of an old Shogun lugged steel Mixte frame for my daughter.
I would like to use the 27" wheels with as wide a tire as I can find.
I have a bunch of these 27" wheels, both rear and front.

The rear I have in mind uses a six speed suntour freewheel.
I have another wheel with a Shimano 6 speed FW but it tops out at 25 teeth vs the suntours 28 Teeth.

I have a set of Shimano Brake/shifters off of a mountain bike. They were shifting a Shimano SIS system using Cassette style gears and braking Canti's. I assume the Brakes will do road brakes just fine

Could I buy a 7 speed FW and shift with these Brake Shifters?

Would the 7 speed Shifters shift a 6 speed FW if I just adjusted the derailer?

Would I need a new rear derailer- I currently have Suntour 3000 and several Shimanos that were friction shift circa 1986-7
