Greetings;
any thoughts/experience lubricating ritchey mountain pedals(two sided SPD), not exactly sure of the exact model (not high end by any means)? Pedals are very stiff and left side occasionally "squeals" with the pain of metal on metal, from spindle contact with the plate.

If I am not mistaken, Ritchies are not as easily serviced as the standard shimano SPD spindle assemblies. I would either do one of two things in your case. Either take it to a shop to service it all the way, or/and in the meantime so you can ride, run some oil down into it so its not squeaking at least.
