I just got a Lemond Zurich, which has Ultegra Componets, and the rear derailleur seems to be ghost shifting and is a little noisy. I am wondering if I need to tighten up or loosen the cables to fix the problem?

Chances are your cables have stretched a little bit and need to be adjusted. This is common with new bikes during the break-in period and a good LBS will tell you to bring the bike back in a month or so for a full checkup and adjustment.

perhaps the rear derailleur adjuster knob was knocked or turned during the car ride home.
also, you didn't mention if the bike is new or used.

The bike is used, but low miles (320).

Check your rear derailleur hanger and pully cage alignment it/they may be bent.

Yup - I'd start with the cables, and work my way to the rest of the driveline if this does not fix the problem.
