I have a 278km (172mi) charity ride (tip to tip of an island) on the first weekend of August. It's not a race, just a ride. Nevertheless, it's quite a big deal for those participating. I'm logging some decent miles and was wondering about how best to spend the last two weeks before the ride in terms of the type of riding to do and what to eat the week before the event, and the day of the event.

Just realized there was a long distance forum...I'll have a look there.
The long distance forum is brand new, so there may not be many people reading it yet.
You should spend the last week recovering. Rides of about an hour or so, low gears, and slow. You can add a few short (1 minute-ish) high-intensity efforts if you think you will need that for the ride, but you don't want to stress your system at all.
The week before can have some hard efforts, but I'd avoid too much stress.
There isn't much you can do to improve your endurance fitness in the last two weeks before a long ride, but there are lots of things you can do that will make you tired the day of the ride.
