If done properly, Egg Foo Yung.
Otherwise, probably sesame chicken or sesame potatoes.
I'm really more into Thai food (Panang or any "yum" style dish).

Oh Dim Sum is my 'favorite' to order just because lots of the items (like chicken-feet) just seem like something that is exotic to the point of 'grossness'. I grew up in a boring Ontario town and I just like to spite my bland heritage now and then.
My favorite tasting Chinese food is a toss-up between crispy chicken or duck with orange sauce.
lo mein is one of my favs. I have never had dim sum though (and everyone is shocked)

Buddhist faux sesame chicken (fake meat at a good Chinese restaurant is excellent and I know many people that prefer it to the real stuff), hot & sour soup with tofu and green tea.

Well, I'm well travelled in China, so I'll give my favorite foods from different parts of China:
Southwest: Over the Bridge Noodles
Northwest: a toss up between Kal Roe (Muslim "Barbecue") and Muslim Mien Pien (Muslim noodles with beef)
Tibet: Tsampa and Butter Tea
East: Wonton Soup
Beijing: Beijing Duck--scrumptios!

Actually I like roast duck, without sauce/gravy. Also, lobster in black bean sauce. Also, steamed fish where they sprinkle green onions and ginger on the fish, and pour hot peanut oil overall just before you eat.

Exactly. Most places here drown the duck in sauce/gravy. I prefer the skin crisp and the meat un-drowned.

Yeah, Beijing trained chefs cook it without the sauce and the sauce is an item you can dip the duck meat into. Believe it or not, I really like the head a lot. The last time I had it was in Xining (capital of the Qinghai province) and it cost about $30 for 8 of us. They were Beijing trained chefs/cutters and it was just like in Beijing--only about 1/3 of the cost.

This is tough..I like almost everything. I prefer my food very spicey though. One of the places I go to knows I like it hot, so they put some really frickin' hot stuff in my food and stood in the kitchen door and watched me eat it. After I cleaned the plate, I asked if I could have some of the hot stuff to take home. I loved it!! It was really good. But anyway, to back to the original question....I like low mein, terriyaki(sp) meats and egg drop soup is pretty good when done right.
I love asian restaurants. I love the asian market at both ends of the street where I live, and asian chicks are HOT.

A good Vietnamese girl I used to be good friends with used to get it for me all the time back in college because I loved it so much. It's called "Ba-ing Tek" or something like that.

Chinese Muslim BBQ (Hui, Uyghur and Salar food) can be really spicy. In fact, I burnt my tongue in Xining (Qinghai province) a couple of weeks ago on a calroe sandwich where the spices had been poured on too thick. The Muslim Mien Pien (noodles with beef) give your mouth a lickin' too. I eat jalapeno's whole (I grew up on the US/Mexico border) and I can barely handle the stuff. Sichuan (I think we call is Shezhuan here in the US) food is also really spicy--though be sure to ask for the mouth numbing spice too so you can handle it a bit better (it literally deaden--in a mild way--the nerves in your mouth like novacaine temporarily--it's an interesting sensation).

Duck tongues, chicken feet, bbq gizzards and jellyfish.
There's a lot of authentic Chinese dishes we don't get in the States. There's a lot of scrumptuous seafood dishes that are light and tasty, unlike a lot of the deep-fried saucy stuff we get here. However, I do like the crispy battered shrimp dishes.
If you're ever in the LA area, you gotta check out the Ocean Star restaurant in Monterey Park (http://search.yahoo.com/search?p=%22monterey+park%22+%22ocean+star%22+restaurant&prssweb=Search&ei=UTF-8&fr=moz2&x=wrt), simply the best!!! :) One of the few places that has fresh live shrimp, lobster and fish!
I can't stand chinese food anymore... its vietnamese, thai, or japanese for me.

Pork dumplings, with a dipping sauce of 1/2 soy, 1/2 vinegar with a liberal sprinkle of ginger oil.
Slightly pickled cucumbers and onions.
String beans with sesame seeds.
Peanuts.
Simmered veges (in season).
Stranded pork or chicken with a black bean sauce.
Sichuan duck hearts.
Local beer.

Yeah, what's with the chicken feet? Pretty disgusting watching women on the train get into one bag of preserved chicken's feet after another.

The sticky rice in a leaf thing is chinese, and based on some old legend about some prince that jumped in some lake, and nobody knew if he drowned or not, so they started making sticky rice wrapped in leaves and throwing them in the water so he wouldn't starve. Mostly in June, I think.
