my rims say they're 1.6" but i can't find any 1.6" tires. can i fit bigger widths?

You could easily do 2.1'' tires on just about every MTB rim.

If you want to go larger than that, (assuming your chainstays and fork will let you) you would need to give the make and model of the rim.

Simply stating that your rim says 1.6'' doesn't help much
