I know there are a lot of questions about wheelbuilding so I'll make this quick. If I wanted to practice/have some fun building a wheel, would it be suitable to take apart an old wheel and just try building it together again? Or have the spokes been worn already? Thanks

That should be fine.
However, I wouldn't ride it. The spokes
are probably shot from all the tensioning/detensioning
and minute changes in the head from seating them.

One very good advice Sheldon Brown provides is to take your time. So unless you have an extra bike you can afford to loose for a week or so, you would be better practicing with a spare wheel.
