Are they good straight from the factory? I wont be riding in any mud, but occasional rain. When should I grease them?

If they're straight from the factory, just ride.

If they start to feel a little gritty when you spin them by hand, unscrew the dust cap and retaining nut (you'll need a socket wrench for that one). Wipe off all the old grease from the spindle and pedal body, regrease, reassemble.
