While I consider myself fairly knowledgeable in the world of upright bikes (specifically in the MTB and commuter areas) I find that I know zilch about 'bents!

Ok, here goes nothing. How are the different types classified? I've seen ones with big ol' ape hangers that look like Peter Fonda should be pedaling them. Ive seen one's where the handlebars are under the seat (more appealing to me) and I've also seen trikes with two wheels out front and one in back (way cool) I haven't seen any with suspension, nor off-road bikes. Are there any that would fit me? I'm what would be considered Clydesdale / Rhino class in MTB. (6'4" 240+ lbs) The reason I ask is because the only people I see on the things are retirees and people of a smaller stature.

Raiyn,
Hope you don't mind cut and paste...
"'Ive seen ones with big ol' ape hangers that look like Peter Fonda should be pedaling them." That would be a Long Wheel Base (LWB) with Above Seat Steering (ASS)

"Ive seen one's where the handlebars are under the seat" Under seat steering (USS) Both Short Wheel Base (SWB) and LWB bikes can be set up with USS

"I've also seen trikes with two wheels out front and one in back (way cool)" A Tad-Pole trike, check out Greenspeed for more info.

"I haven't seen any with suspension, nor off-road bikes." You can get both, do a search for mountain quad a four wheel off road recumbent. Or check out Burley for suspension bents.
"Are there any that would fit me?" Yes, many builders offer larger frames if needed.

In reference to a class of bike "Rhino" there are quadcycles (4 wheels) some have 26" mountain bike tires, disk brakes all 4 wheels.
