I am trying to center my chainring as described here under chain tension:

but one of the stack bolts is stuck. It just turns in the crank spider, and will not loosen. What sort of tool am I supposed to use to hold the back side of the bolt (with the two slots across from each other) still while I turn the front side (the 5mm hex)? Or is there some other trick to this?

Hopefully I'll have this damn bike together tomorrow... so close.

Big-ass screwdriver?

They make special chainring bolt tools, but a screwdriver should work.
