I own an early '90s Trek 520 with Deore DX front and rear derailleurs. The bike needs a new cassette, chain and chainrings. My question is -can my Deore dx rear derailleur handle a cassette that includes a 32 or 34 tooth cog (largest cog on bike now is 28 tooth)?

32 will work for sure and my bet is it'll handle a 34 too.

As RG says, 32 almost certainly, 34 probably. You might want to ask this question to Sheldon "Encyclopedic Knowledge of Past and Present Components" Brown :)
